Ingredients:
6 Afia Turmeric Falafel
1 cup rice
1 cup carrots, julienned
1 cup daikon*, julienned
1 ½ tbsp rice vinegar
Pinch of salt
1 large cucumber, julienned
2 cups cabbage, shredded
Pretty Thai® Peanut Sauce
Pretty Thai® Muay Thai Sauce, to taste
Cilantro, garnish
*red radish can be a substitute if daikon is not easily available!
Step 1:
Prepare falafel and rice according to package instructions. While they cook, combine the carrots and daikon in a small bowl. Add the rice vinegar and a pinch of salt. Toss to combine and set aside for 10-15 minutes.
Step 2:
Split the rice between two bowls, then layer on the cabbage, cucumber, and marinated carrots and daikon. Top with Afia Turmeric Falafel (or flavor of your choice!). Sauce with Pretty Thai® Peanut Sauce, to taste. Add Pretty Thai® Thai Chili Powder or Muay Thai Sauce if you like extra spice! Garnish with cilantro and enjoy!
