Glutinous Rice (optional – for topping the lettuce wraps with toasted rice powder)
STEP 1 Finely dice the shallots and garlic. Halve the cherry tomatoes and slice the cucumber. Finely chop the mint and cilantro.
STEP 2 Heat the oil in a skillet on high heat. Add in the garlic and shallots and slightly brown. Add in the ground pork and brown it. Once the pork is browned and thoroughly cooked, stir in the Pretty Thai® Tiger Smirk sauce and combine well.
STEP 3 Remove the pan from the heat and add in the tomatoes, mint, and cilantro. If desired, sprinkle with the Thai Chili Powder and Roasted Rice Powder (optional). Serve with the lettuce cups and cucumbers.
Optional Step:If you choose to make the toasted rice powder, toast the rice in a skillet on the stovetop until it has evenly browned, or in an even layer on a sheet pan on 375˚F until golden brown. Grind the toasted rice in a spice grinder until it creates a course powder. Sprinkle the toasted rice powder on top of the larb to add a nice earthy crunch!
