4 ears corn, husks removed
1 jalapeño, deseeded and veins removed
1/2 red onion, small diced
1 handful of cilantro, chopped
2 sprigs ofdill, chopped
2 tbspPretty Thai®Tiger Smirk Sauce
2 tbspsour cream
STEP 1Preheat oven to 450˚F. Oil the corn with coconut oil and sprinkle with a pinch of salt. Bake for 15 minutes. Remove from the oven and let cool.
STEP 2Place the jalapeño, red onion, cilantro, and dill in a medium bowl and mix to combine.
STEP 3In another small bowl, whisk together the Tiger Smirk, sour cream, and mayonnaise. Combine the sauce with the veggies.
STEP 4After the corn has cooled, cut the corn off the cob. Mix it in with the goodies. Season with salt and pepper, tt. Stir to combine and serve.
