    Ingredients

    4 ears corn, husks removed

    1 tspcoconutoil

    1 jalapeño, deseeded and veins removed

    1/2 red onion, small diced

    1 handful of cilantro, chopped

    2 sprigs ofdill, chopped

    2 tbspPretty Thai®Tiger Smirk Sauce

    2 tbspsour cream

    2 tbspmayonnaise

    1/2 tspsalt

    pinch ofpepper


    Directions

    STEP 1
    Preheat oven to 450˚F. Oil the corn with coconut oil and sprinkle with a pinch of salt. Bake for 15 minutes. Remove from the oven and let cool.

    STEP 2
    Place the jalapeño, red onion, cilantro, and dill in a medium bowl and mix to combine.

    STEP 3
    In another small bowl, whisk together the Tiger Smirk, sour cream, and mayonnaise. Combine the sauce with the veggies.

    STEP 4
    After the corn has cooled, cut the corn off the cob. Mix it in with the goodies. Season with salt and pepper, tt. Stir to combine and serve.
