½ tbsp Mesquite Olive Oil (Preferred brand is the Texana Brand Smokey Mesquite Infused Olive Oil)
2 tbsp extra virgin olive oil
Salt and pepper, to taste
1 (15 oz) can pinto beans
1 (15 oz) can kidney beans
1 (15 oz) can garbanzo beans
½ red onion, diced
2 celery stalks, diced
1 cup parsley, loosely packed and finely chopped
STEP 1 Stir together the Pretty Thai® Sweet Chili Sauce, garlic, and rice vinegar in a medium bowl. Next, whisk in the Mesquite Olive Oil and extra virgin olive oil until the dressing comes together. Season with salt and pepper, to taste. Set the dressing aside.
STEP 2 Rinse all the beans and put them in a large bowl. Mix in the red onion, celery, and parsley. Pour the dressing over the beans and stir to combine. Serve alongside some smoked pork ribs or BBQ chicken. Enjoy!
Note: You can also add in additional mix-ins such as diced jalapenos, bell peppers, or corn. It’s completely up to you as it will all be delicious with the Sweet Chili Mesquite dressing.
