STEP 1 Cook the quinoa, edamame, and Afia Falafel according to package directions. Meanwhile, prepare the vegetables.
STEP 2 Add the cooked quinoa, edamame, cabbage, kale, carrots, scallions, and cilantro to a large bowl and toss to combine. Coat in the Pretty Thai® Peanut Sauce, to taste. Top with the Afia Falafel and chopped roasted peanuts. Enjoy!
