STEP 1 Cook the linguine noodles according to package directions.
STEP 2 While the noodles are cooking, prepare the vegetables. Small dice the grape tomatoes, mango and cucumber. Chop the green part of the green onion and tear the mint into smaller bite sized pieces. Mix together all of the vegetables and set aside. Next, slice the white portion of the green onion and chop the garlic.
STEP 3 After preparing the vegetables, heat oil in a sauté pan to medium high. Add in the chopped garlic and white portion of the green onion. Sauté until the garlic browns and becomes fragrant.
STEP 4Next, assemble the salad. Place the cooked noodles in a large bowl and stir in the sesame oil and Pretty Thai® Peanut Sauce. Next, add together the veggies and the garlic/scallion mixture. Stir to combine. Add sesame seeds and crispy wontons for garnish.
